Soybean lecithin is a phospholipid mixture containing the typical ingredients of Phosphateidylcholine, Phosphateidylethanolamine and Phosphateidylinositol. These include a large percentage of fatty acids among which the multiple polyunsaturated linol and linolenic acids are predominant.
